Makes 2-4 servings
This is such a versatile base to any meal, for a low calorie / low carb day this is perfect for lunch and if you’re not fussed about keeping it light then all you need to add is your choice of protein and you’re there.
You will need:
4 cups of salad greens
100g Feta, crumbled or cubed
1 cup Olives
1/2 Red Cabbage, finely sliced
2 tablespoons of Olive Oil
2 tablespoons of Apple Cider Vinegar
Himalayan Rock Salt & Black Pepper
Add the leaves, olives, cabbage and feta into a large salad bowl. Drizzle the olive oil and vinegar over the salad and mix together.
Delicious on its own or you can easily add your choice of protein to bulk it up. Dish up and enjoy 🙂
