I’m not a massive fan of beans and yet when I taste a dish like this I really enjoy the flavours. Very simple, very tasty and very filling.
Makes 2 Servings
You will need:
1 Tin Haricot Beans, rinsed and drained
1/2 Cup of Water
1 Teaspoon Curry Powder
2 Handfuls of Rocket
2 Handfuls of Baby Spinach
1 Tablespoon of Sesame Seeds
2 Tablespoons Chopped Almonds
1 Tablespoon Olive Oil
Juice of 1/2 a Lemon
Himalayan Rock Salt & Pepper to taste
Gently warm the beans in a pot, mx in the water, Curry Powder & season to taste.
Combine the greens and divide them between two plates. Place the beans on top and sprinkle them with the sesame seeds and almonds. Drizzle the olive oil and lemon juice over the mixture. Season to taste.
This salad is delicious with chopped avocado on the side.
Pick up your fork and tuck in.
