This salad makes me feel like I’m in a tropical paradise; especially when the mango is perfectly ripe: The flavour combo is delicious, light, yet satisfying.
You will need:
2 Handfuls of salad greens
1 Mango Chopped
1 Avocado Chopped
1/2 Handful of Parsley
1/4 Red Onion Finely Sliced
2 Tablespoons Olive Oil
2 Tablespoons Apple Cider Vinegar
Juice of 1/2 Lemon
Himalayan Rock Salt & Black Pepper to taste
Combine the salad greens, mango, avocado, onion and parsley in a large bowl.
Whisk together the cider vinegar, lemon juice and olive oil, adding salt & pepper to taste
