Eggs The Way You Like Them


Ok so this combo may be a little different from what you’re accustomed to for breakfast, give it a go & let me know what you think! Makes 2 servings.

You will need the following ingredients:

1/2 Cup Cooked Quinoa

1 Tablespoon Coconut Oil / Butter

2 Eggs

Himalayan Rock Salt & Black Pepper to taste

1 Chopped Avocado

1/2 Lemon

2 Tablespoons Spring Onion

Cook the eggs, season to taste.

Serve the quinoa, topped with egg, avocado & spring onion.

Drizzle lemon juice over the dish and tuck in.
