Kale Salad


This salad is surprisingly delicious, with a creamy dressing and packed with nutrition and flavour, the best of both need and want to eat ! Makes 3 – 4 servings

1/2 cup Tahini

1/2 cup Water

Juice of 1 lemon or 1 Tablespoon Apple Cider Vinegar

1 small clove of garlic – I tend to leave this out only because I’m not wild about garlic but its good for you, so include it if you like the flavour

2 Tablespoons Olive Oil

Himalayan Rock Salt & Black Pepper to taste

1 Head of Kale, stemmed and roughly chopped – approx 4 handfuls

1 Cucumber or 4 Baby Cucumbers, chopped

1 Avocado Chopped

10-20 Cherry Tomatoes – I keep these whole

1 Can Chickpeas, drained and rinsed – I use these to bulk up this salad for a hungry day šŸ˜‰ salad is divine without them if you prefer

2 Tablespoons Shelled Hemp Seeds

In a large salad bowl, whisk together the tahini, water, lemon, garlic, olive oil, salt and pepper.

Add the Kale, cucumber, avocado, tomatoes, chickpeas and hemp seeds and fold into the dressing.

Once the ingredients are combined you are good to go!

Super simple, super nutritious and simply delicious.
