OMG! This is so delicious and filling …
For this recipe you will need the following :
- 50g quinoa, cooked with 100ml water with 1/2 tsp bullion powder added
- 2 medium tomatoes, roasted with fresh rosemary and a drizzle of olive oil
For the pesto :
- 1 large handful of fresh basil
- 100ml olive oil
- 100g pine nuts
- 1 clove garlic
Blend ingredients in a processor.
Serve roast tomatoes on top of quinoa with pesto either mixed in to the quinoa or drizzled on top.
