Spicy Pumpkin Hummus

Hummus is a staple in my fridge – I absolutely love it! Such a great way to add protein and yumminess to your diet.  It’s always best to make it yourself so you know exactly what’s gone in to it. It also means you can tailor the flavours to whatever you fancy at the time – lemon, chilli, coriander – whatever!

So with that in mind, and given it’s the season of pumpkins and squashes, I thought I’d have a go at some spiced pumpkin hummus! There’s lots of ingredients but it’s super simple to make!

You will need:

1 1/2 cups of cooked Chickpeas

1 cup cooked Cannellini beans (or use another cup of Chickpeas)

1 3/4 cup of pureed pumpkin (see below for how to make your own, or buy ready pureed)

1/4 – 1/2 cup Lemon juice (start with 1/4 cup and add more if you like a more lemony taste)

2 tsp Lime juice

1/2 cup Tahini

1/2 cup Olive oil

1/2 tsp Tabasco (optional)

2 gloves Garlic

1/4 tsp ground Cinnamon

1/4 tsp ground Nutmeg

1/4 tsp ground Cloves

1/4 tsp ground Ginger

1/4 tsp ground Coriander

1/4 tsp Chilli powder (optional)

Salt and pepper to taste

Put all the ingredients into a mixing bowl or a processor bowl and then use a hand blender (or a processor) to blend them all together until smooth! Taste as you go and adjust the spices and lemon juice as necessary. If you find it is too thick add a little more oil. If it’s too runny then you can add some extra chickpeas to thicken it up. Once blended pop in the fridge and then serve! This makes quite a lot but you can easily freeze it if you’re not going to get through it.  Delicious served with crudites or on some spelt crackers! Or just dolloped on your salad 🙂
