This is the easiest and most nutritious chocolate (yes chocolate) pudding recipe I know that is high in protein and full of lovely things that you don’t have to feel guilty about eating!
You will need:
300g silken tofu
4 heaped tbsp of raw cacao powder
1 heaped tsp cinnamon powder
4 tbsp raw coconut sugar
2 tbsp maple syrup
1/4 tsp chilli powder
Pop all the ingredients into a blender and blitz until smooth, pour into pudding dishes and chill. Delicious served with sliced granny smith apples or berries. I often serve this at dinner parties with success!
The recipe is really versatile so play around with it and try adding different ingredients to change the flavour. I sometimes add coconut butter and vanilla extract for a change and love the combination of 1/2 tsp nutmeg, 1/2 tsp cinnamon, 1/4 tsp of chilli and 1 tsp vanilla extract.

Hmmm! Sounds amazing!! I have tried to make a chocolate pudding with avocado before, but never with tofu. Since I simply LOVE silken tofu, I will definitely try this! Thanks for the great recipe! 😉

I tried it this afternoon! It was amaaaazing! 🙂 It tastes “fresher” than the versions with avocado and dried fruits. I plan to write a post with the many different variations, want to mention this one too, definitely a favorite for me 😉 Thanks again!
