A very pretty salad recipe


This was such a pretty salad I couldn’t resist posting it here…

Can you spot how many different veggies are in it?

People often ask me how I go about pulling together interesting food and if there are any ‘rules’ that apply. I thought I would share my approach here… So simple.

I always start with leaves, in this case spinach, on top of that I usually layer a grain, so quinoa, spelt or lentils, in this salad I used mixed quinoa. Then on top of that a selection of veggies. Here you will find, sweet corn, roast cherry tomatoes, roast aubergine, roast asparagus, a dollop of humus, a tablespoon of mango chutney, a drizzle of tahini and balsamic vinegar. The options are endless 🙂

Simple, nutritious and full of plant proteins, just the way I like it!
