Courgette, Goat’s Cheese and Pulse Summer Salad


A refreshing salad full of delicious summer flavours

Layer your ingredients as follows:

Mixed Salad Leaves for the base, then add 1 Courgette sliced in ribbons, add a handful of Broad beans and a handful of Chickpeas and scatter evenly. Then add about 20 g Goat’s Cheese, layer on the roasted Butternut slices, 1 tbsp Pomegranate Seeds a few fresh Mint Leaves and drizzle olive oil over the top.
