Hummus with Sliced Veggies – Serves 2


So simple, so delish!

1 cup of cooked Chickpeas or Garbanzo beans

¼ cup of filtered Water

2 cloves of fresh Garlic

2 tbsp Olive Oil

1 ½ tbsp Tahini (to taste)

Salt and Pepper to taste

Juice from ½ Lemon plus zest from 1 Lemon

1 tsp Origano

 

Blitz ingredients in a blender until smooth. Slice up a selection of vegetables, I like to use carrots, green beans and celery. Place in serving bowl, and drizzle 1-2 tbsp of olive oil on top and garnish with pine nuts. Serve immediately with your veggies or cover and refrigerate. Should keep for 1 – 2 days, although mine never lasts that long. Variations: For a bit more bite to your hummus, add a finely chopped chilli or a tsp of cayenne pepper or paprika. I also like to add some hemp Complete Protein Powder every now and then.
