Supercharged Protein Tastic Brekkie for 2


Chilli, Tomato & Feta Omelette

You will need the following:

  • 1 slice of Rye Bread (wheat & gluten-free) per person
  • 6 Large Free Range Eggs, lightly beaten
  • 100g Feta Cheese chopped into small blocks
  • 1 cup Cherry Tomatoes, chopped
  • 1 Red Chilli, finely chopped
  • Salt & Pepper to taste
  • Coconut oil to cook

Pop your bread onto toast lightly. This recipe is lovely without toast if you prefer. Prepare the other ingredients. Once you are ready, warm a pan or griddle, add your coconut oil, then pour the eggs into the pan pulling the edges away as they cook allowing the eggs to cook through. Add the tomato, chilli, feta and seasoning. Once the feta starts to melt, fold the omelette over and serve immediately. Enjoy!
